Valentine’s Day 2021…still in lockdown. Now I’m not usually one to care that much for Valentines Day, it’s always seemed a bit too mushy for me. Don’t get me wrong…I adore my wife, but I usually just nip out get her a bunch of flowers and be done with it. But this year it felt different. It felt like because we can’t do ANYTHING, we have to do something. I didn’t want it to be another reminder of how crap lockdown is and how much we are all missing out on. I know I’m not the only one who is desperate to get out to the bars and restaurants to enjoy a nice night out. But we can’t…not yet anyway. So here was my plan for Valentine’s day, with everyone staying at home I wanted to make something that you lot could enjoy and have as an easy at home date idea to get the excitement going. Queue my Valentine’s Box. Seven mini pouches filled with fantastically flavoured gins for you to taste together…or on your own for that matter (Self love is the most important kind of love!). After launching it you lot were fantastic in your enthusiasm and so I couldn’t just leave it there. I knew the next two cocktail ideas had to be using gins from the box. That way you have ideas already of what you can make on the 14th (or the 13th if, like me, you want to get sh*t faced but have a busy Monday morning). 

Raspberry Ripple Gin was just something fun, it doesn’t take itself too seriously and so if those botanical experts amongst you start throwing your noses up I dare you to try some and not be thrown back to those wonderful memories of having ice-cream on the beach. It has a fairly obvious flavour here, and so with a cocktail I didn’t really want to try argue with that, in fact I wanted to lean into it. Go all out with the ice cream effect. So I did…it literally has ice-cream in it! This is definitely a dessert cocktail, but its a hell of a lot more fun than any dessert you will buy from the supermarkets (should you dare to brave them), and its a hell of a lot more boozy – what more could you want!

So let’s get drinking, as they say in Spain:

Ingredients

50ml Raspberry Ripple Gin

25ml Freshly squeezed lemon

15ml lemoncello

Handful of Raspberries

Scoop of Vanilla Ice cream

 

Method

  1. Put the raspberries into a cocktail shaker, leaving out one or two for garnish. 
  2. Muddle the raspberries so that the juice escapes.
  3. Add the spirits, lemon juice and ice.
  4. Shake it till you make it. 
  5. Strain into a glass (for aesthetic purposes a wider shorter glass works well so that you can still see the ice cream. 
  6. Garnish with the vanilla ice cream and remaining raspberries.
  7. Enjoy a deliciously boozy dessert!
