The wisdom of the Irish gin // baileys // vanilla liqeur

It’s about time I made a cocktail recipe for my 265 club members, a lot of you have been asking for one to go with your monthly gin. And you all know I can’t say no to you! So this month I decided to go all out and even include one of the cocktail ingredients in the box…that good old Irish spirit we all know and love…Baileys! 

This months gin was inspired by the Irish flag, mint (green), marshmallow (white), and grapefruit (orangey-red-ish). It may not sound like a combination that works, but it does! Trust me, and once you have fallen in love with the gin, it’s time to try it with something a little more exciting. For an Irish cocktail it had to be something boozy…and what’s got more booze in it than a Martini! This Martini is a lot softer than the usual, with the cream and baileys giving it a really rich and almost dessert like flavour. But that doesn’t mean you won’t be walking side ways after your third! Just how the Irish like it! 

So, without further ado….let’s get drinking, as they say in Spain:

Everyone should believe in something, I believe we should have another drink.

Ingredients

20ml 265 Club March Gin

15ml Baileys

15ml Vanilla liqueur

30ml single cream

Coco powder to rim the glass *

 

*To rim the glass, put a layer of coco powder onto a plate or shallow bowl. Squeeze half a lemon onto another. Take your glass and dip it in the lemon juice upside down, so the rim of the glass gets coated. Next do the same with the coco powder, letting it stick to the juice. Now you’re ready to start making your cocktail!

Method

  1. Rim your glass with coco powder.
  2. Fill a cocktail shaker with ice then pour in the ingredients. (If you don’t have vanilla liqueur, you can amend the recipe by using 30ml gin and 20ml Baileys, and adding a few drops on vanilla essence)
  3. Give it a good old fashioned shake until it’s completely mixed. 
  4. Strain into your glass.
  5. Please drink responsibly…and by that I mean be responsibly prepared and have enough ingredients to make a second…because you’ll want one!
