Northern mojito

You all know the story behind Northern Lights Gin. I was out in Spain…shock…and I tried a bloody delicious gin mojito, the first one I had ever had. Within the next half hour I had had more than I care to mention, the rest of the night was a bit of a blur. But I did wake up the next day knowing that I had to make a gin inspired by those incredible flavours. The zesty Lime, partnered with tropical kiwi. I was so chuffed when I finally made the gin of my mojito dreams.

Because of this, when I was deciding on which cocktail to make with Northern Lights, it was kind of a no brainer. Of course it had to be a mojito…what else?! I’ve kept it simple, refreshing and god damn delicious. I get through a glass of this far too quickly, so it’s a good thing I have a mint plant in the garden. (Full disclosure, it was purchased only for mojitos and cocktails…can you blame me?)

This drink is super easy, and looks the part as well. Pouring in the club soda over the ice gives a beautiful layered effect, just be sure to give it a good stir before sipping.

So, without further ado….let’s get drinking, as they say in Spain:

Everyone should believe in something, I believe we should have another drink.

Ingredients

50ml Northern Lights Gin

15ml Simple Syrup

15 Mint Leaves

Half a Lime

Club Soda

 

Method

  1. Place the mint leaves and lime into a cocktail shaker and muddle till all those juices have been released.
  2. Pour in the gin and simple syrup then fill with ice.
  3. Give it a good shake.
  4. Strain into a tall glass filled with (crushed) ice.
  5. Top up with Club Soda.
  6. Garnish with a slice of lime and a mint leaf or two.
  7. Make sure to give it a good old stir before sipping.
  8. Try not to guzzle it down too quickly (I know that’s impossible but I can pretend)
